Blueberry Muffins

My dear darling mama recently had her gallbladder out and demanded muffins. I, as her loving doting daughter, happily conceded to her command.

Okay, okay. I just like baking.

These seriously have to be some of the best muffins I have ever made though; I just love the recipe. I located it via google, hosted on a blog I'd never seen before. (I love finding blogs.)

Ingredients:

4 eggs
2 cups white sugar
1 cup vegetable oil
1 tsp. vanilla extract
4 cups all-purpose flour
1 tsp. salt
1 tsp. baking soda
2 cups sour cream
2 cups blueberries


Beat the eggs for 30 seconds and then add the sugar slowly. 

 Add the oil and the vanilla, continuing to beat the mixture.

 Mix the flour, baking soda, and salt together in a bowl. Add a little at a time, alternating with the sour cream. When it's all mixed together, add the blueberries.
Line two cupcake pans with paper liners and use an medium-sized ice cream scooper to put the batter into them. Bake at 400 degrees for 20 minutes.

They look lovely, don't they? I've been in a cooking mood lately; I made cinnamon rolls at the same time.
